Pumpkin Spice Latte


1 cup milk, divided
1 T. sugar
1 T. pumpkin puree
1 t. pumpkin pie spice
½ t. vanilla extract
¼ cup brewed espresso



Whisk ½ cup milk, sugar, pumpkin puree, pumpkin pie spice and vanilla in a small saucepan over low heat.  Simmer for five minutes.  Whisk in remaining ½ cup milk.

Pour this mixture through a fine-mesh sieve to remove pulp.  Return the milk mixture to saucepan and simmer, whisking two minutes.  Add espresso and whisk until foamy, about one minute.

Add whipped topping, a cinnamon stick, and sprinkle pumpkin pie spice on top if desired.
