Pumpkin Muffins


1 ¾ cups flour
1 cup sugar
½ cup dark brown sugar
1 t. baking soda
½ t. salt
2 t. cinnamon
¼ t.  ground cloves
¼ t. nutmeg
2 eggs
1-15 oz. can pure pumpkin puree
½ cup melted coconut oil

1 t. vanilla extract



Preheat oven to 375 degrees.
Place cupcake liners into standard size muffin pan.
Measure flour, sugars, baking soda, salt and spices in bowl and whisk together.
Set aside.
In another bowl, whisk together the eggs, pumpkin, coconut oil and vanilla.
Pour the wet ingredients into the dry ingredients and stir together.  Do not over mix.

Scoop batter into each muffin well.  They will be nearly full. 
Bake for 20-22 minutes or until toothpick inserted in center comes out clean.
