Red Velvet Cake |

Ingredients:
1 cup vegetable oil
1 ½ cups sugar
1 – 1 ounce bottle red food coloring
2 eggs
2 cups self-rising flour
1 teaspoon soda
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla

Directions:
Cream first four ingredients. Sift dry ingredients and add to creamed mixture alternately with buttermilk. Bake in three 8-inch greased and floured cake pans for approximately 25 minutes at 350. Let cool before frosting.

Frosting:
¼ cup flour
1-cup milk
1-cup vegetable oil
1-cup sugar
¼ teaspoon salt
1-cup nuts
1-cup coconut

Cook flour and milk until it makes a paste. Let cool and add rest of ingredients. Stir well until oil is dissolved. Frost on top of layers. Let it run down sides.
Alternative:
Cake is pictured above with the following Cream Cheese Frosting:
1 8 oz. cream cheese
1 stick butter
Cream together the butter and cream cheese. Add one box of powdered sugar and mix well. Add one teaspoon of vanilla flavoring. Frost cake and top with crushed walnuts. |
