Peel and pit the peaches, and then chop them finely. In large bowl, place 3 cups of chopped peaches and stir in the lemon juice. Add the sugar and mix well. Let mixture stand for at least ten minutes stirring occasionally.
Place one box of Sure Jell along with ¾ cup of water in a small saucepan. Bring to a boil on high heat, stirring constantly. Boil for one minute and remove from heat.
Stir the pectin mixture into the peaches and stir until sugar is completely dissolved. (approximately 3 minutes)
Pour into small glass jelly jars or plastic containers. Cover tightly and let it stand at room temperature for 24 hours until set. It can then be put in the refrigerator for immediate use or placed in the freezer for up to one year.
