Directions:
Preheat oven to 350 degrees.
In large bowl, cream butter and sugar until light and fluffy.
Add eggs, one at a time and beat well.
Stir in mashed banana and pineapple.
In a medium-sized bowl, sift together flour, baking powder, baking soda and salt.
Add to wet ingredients.
Stir in coconut.
Pour mixture into a greased 9x5 loaf pan.
Bake for 60 minutes or until an inserted toothpick comes out clean. |
