Poppy Seed Chicken
1 chicken (cooked, boned and diced) or 3 cans chicken
1 can cream of mushroom soup
1 can cream of chicken soup
1 T. poppy seeds
1-cup sour cream
¼ cup chopped onion
garlic, salt, pepper to taste
Place 1 1/3 cups uncooked Minute Rice in bottom of 9 x 13 pan.
Pour one cup of hot water or chicken broth over the rice.
Spoon the chicken and soup mixture over the rice.
Top with grated cheese.
Crush 20 Ritz crackers and mix with ½ stick melted butter.
Sprinkle over casserole.
Bake until bubbly in center in 325 ° oven.
